Huh, so caul fat ( mỡ chài ) is a thing in Vietnamese cuisine. That’s very useful information.

I guess with that much you could vacuum pack them in smaller portions and freeze?

Not exactly caul fat but does anybody know where to source Veal Tongue in LA? McCall’s and Cut Above were both an emphatic “no” .

Most kosher butchers have or will get veal tongue.

Emphatic no in that they were just sure they’ve never stocked it, or is there like a health risk or societal stigma towards veal tongue that I’m not aware of?

It’s probably going to be a special order item. I would try one of the butchers at the Original Farmers market like Huntington meats

Like a lowkey “Oh no, we would never carry VEAL” inflection.

Oh ok just the generic anti-veal sentiment, how tired of them

Isn’t veal a byproduct of high dairy demand? So by consuming veal, you’re actually being less wasteful?

Veal was popular in the 60’s and 70’s and that led to some terrible farming practices.

21st century veal are treated humanely but there’s still some residual stink.
