They all blend together after a while. When trying a new restaurant, the first thing I scan for on the menu is whether they have anything I haven’t seen on every other menu in town.

IMneverHO, that seems like a statement from someone who lives in a city with a lot of choices. We live in the Reno/Lake Tahoe are with perhaps 300k population. We have some fantastic restaurants (new and surprising) but not like what you describe.
