Underneath the surface are the tasty fungi and pieces of bone marrow, because of course there’s bone marrow. Light and satisfying.

This has all the flavors of a Vietnamese chicken salad, salty, sour, sweet, tart, herb-y. So perfectly dressed, it’ll make tim gunn jealous.

This very much reminded of the shredded pork in garlic sauce Sichuan dish, only with tender fatty chunks of pork toro.

After a 5 year hiatus this sucker is back and it’s spectacular. You wouldn’t think this would go together on paper but incorporating each ingredient in one bite and it just works. Highlight of the night.

delicious, soft and crispy eggplant balanced with the cool aioli. however, this was tiny, about the size of a tea saucer, i could have eaten about 10 of these.

The fish cheeks of the chicken. deliciously tender, crispy, and smoky. science needs to engineer a chicken with more than two oysters.

(new) sugar snap peas, ponzu, green garlic, sesame
nice bite with a tart, nutty sauce.

prawns, roasted garlic, chili lime salt
snappy prawns from new zealand. prime head sucking alert.

crispy pig head, pernil, congri, marinated onion, lime
a croquette of pig head with red beans and rice. okay, a bit dry.

(new) king crab, meyer lemon, furikake, potato, chive
like a king crab shepherd’s pie, delicious. this reminded me of the blue crab simplissime at tesse

So much going on here, but like most dishes at animal, eaten all together it’s totally balanced and just works.

I really adore the hamachi tostada. It’s one dish that I can taste in the back of my mouth when thinking of it.

Thanks @PorkyBelly. Looks delicious! I really like the creativity and refreshing sounding dishes Animal is adding these days. And of course finishing it off with something “richer” like their Foie Gras (anything - Biscuit, Loco Moco, etc.). :wink:

Had a memorably great meal last night. It was a social occasion so I didn’t get many photos. Carta di musica, tendon chip, charred cabbage, scallops, pig head, pig ear, tongue, rabbit larb, all fantastic.

The prawns were insane. I probably wouldn’t have ordered them but i smelled them at another table. We devoured every scrap except the carbonized antennae. This was 1.5 orders.

Genius dessert, never had anything like it. Soft cheesecake custard on the bottom with crunch from both the sorbet and graham cracker crumbs.

The wine markups were also insane. Occhipinti Frappato goes for $42-48 in stores, here it was $118.

Great pics and report! :slight_smile: Oh! Who was it that recommended the tandoori octopus back in the day? And it was gone off the menu for a long time now. I must try it (I strangely keep missing it whenever we go it’s not on the menu).

Was there anything new that you think was a distinct replacement for their Foie Gras Biscut & Loco Moco? Thanks.

yep, that was me.

unfortunately they don’t have anything that comes close to replacing their foie dishes. on a related note, what would prevent them, or any restaurant, from serving and charging for say just the biscuit and then adding the foie free of charge? i shall coin it the “foie gras-tis”.
