I found the oriiginal SF location really inconsistent, but consequently haven’t been back in a few years, so maybe he’s figured out how to make it work.

Since I do not know much about pizza baking… I assume the screen is a bad thing? Does it result in a less crispy crust?

Lots of people would say it’s a useful tool, but it’s not old-school traditional.

The screen is supposed to help you get a crispy crust… Because it allows air underneath. I think some of the bias comes from it being associated with the conveyor belt pizza joints that use cheap ingredients.

Tony G Is not a slouch. He’s not using cheap horrible ingredients. But perception is reality, for many people.

By the way, a slice from Slice House is probably 50% larger than a slice from Prime. It looks like they cut 6 slices off of 20" pie where prime slices 8 from an 18" pie. Personally, I would rather have a slice from Prime.

But I would have zero problem getting a Detroit or Sicilian from Slice House.

undoubtedly very large slices…I think next time im there I’ll ask them to cut it into 12 not 6 slices…I love the chunks of sausage they use…much more so than crumbly or sliced like pepperoni

I don’t recall from your post about this place, Did you have any of their round pies or just the Sicilian?

So, my first visit was the day before the “soft opening,” when I got there, Tony made my pies…the 1st was a round, NY style with sausage…it was perfect…and there was No screen underneath it…then he made me a Sicilian which also was excellent…airy & crunchy! when I went back a couple weeks ago I noticed the tell tale screen marks on the bottom…the sausage pie was very tasty but the crust seemed noticeably “softer.” I think a Burbank branch is opening in Feb

Og Fairfax was always good. Haven’t been in a minute tho.

El segundo good except you have to give them specific instructions about warming single slices. Otherwise whole pizzas no different from og location.

How’s the Prime Little Tokyo location?

Burbank is pretty consistent and busier than ever. That said, I just buy whatever is fresh and don’t really care what kind of pizza it is.

I get Burbank once a week and while they fuck up how many ranches I want somewhat regularly they only mess up pizza once every few months. Usually an underdone square pie.

This is key to me and the El Segundo location. I’ve waited for a pie to come into the case before ordering. Always good, especially when it comes to sauce.
