Fat + Flour only. It’s been a minute since I’ve had the mango passionfruit, so with recency bias it wouldn’t be a fair fight.
Comparing the Republique mango passionfruit pie with the F&F chocolate passionfruit pie, I like Republique’s better.
The Bouchon version is pretty darn good, so this sounds like a must order. Thanks for the comparison report. I have been hesitant from my past experience with Fiona but it sounds like Rucker is knocking it out of the park in GCM.
I ordered a whole caramel kabocha pie for Thanksgiving for my husband, since he really liked it, and that means I don’t have to bake one. Like I said earlier, it was pretty good for a pumpkin pie but I just don’t love pumpkin pie the same way my husband does. Also added a side of biscuits.
Pearmageddon
Earl Grey Pear Crumble Pie
In complexly anecdotal and non scientific observation, I’ve never heard anyone say “pear is my favorite fruit”. I’d probably agree with them, but if Chef Rucker puts it in a pie I’ll let her try to change my mind. And while yes, pear may never replace persimmons (in my eyes) or bananas/apples/strawberries (according to half assed internet research on the rest of America) as a favorite fruit, this is the absolute best pear-cooked-into-a-dessert dish I’ve eaten in my life. The Earl Grey flavor isn’t overpowering, but adds a fantastic complexity that had me going back bite after bite. This isn’t on the menu often, but if you spot it it’s worth grabbing a slice to see if it can change your mind on pears too.
Pear Milk Jam Hand Pie
After a few weeks of still thinking about that pear slice, Chef Rucker transitioned her seasonal hand pie to to a pear/milk jam mash up. Upon first bite, it actually tastes milky, and while the flavor profile is different, it did remind me of the Earl Grey Pear slice. The crust is of course incredibly flaky and I’m thinking I may prefer the hand pies to the slices, simply because of the optimal filling to crust ratio.
Pear Cranberry Frangipane
Chef Rucker really is on a tear with the seasonal pears, and upon Sam’s reco I snatched this one up too. Pear season won’t last forever, but it seems like I’m really taking advantage To the point though, this Pear Frangipane also slaps, with the cranberries adding a sour/tart-ness to differentiate it from the rest of the pear crop.

BONUS ROUND: Apple Crumble Slice
Apple pie will never ever let you down.
I just got back from picking up my Thanksgiving kabocha pie/biscuits from Fat + Flour. The line was crazy long! My pickup time was at 2 but I got there at 1:40 and got my order 30 minutes later. Not mad, just happy that Chef Rucker is getting so many orders. When the line snaked past McConnell’s, I got the idea to pick up some ice cream since my husband loves vanilla ice cream with his pie. Walked right over after picking up pie, got 2 pints of vanilla bean and sea salt cream & cookies.

New items from the December menu.
Chocolate Peppermint Chess Pie
A holiday twist on Chef Rucker’s standard Chocolate Chess Pie, and as good as that one is, this tweak might be even better. Maybe it’s the time of year, but I really dig the mint. While the dense fudgey filling maintains a similar flavor, it’s the cookie crust that really make it taste like a much more substantial and satisfying thin mint.
Cranberry Buttermilk Chess Pie
The sweet buttermilk custard filling is studded with tart cranberries, which wonderfully balances this pie. The buttermilk chess pies aren’t a staple of Fat + Flour’s menu, so get this while you can. It’s available both as a whole pie and by the slice.
Vietnamese Beef Stew Pot Pie
This weekend, Shawn Pham brought his Bò kho recipe from Fiona to Fat + Flour, to tremendous results. The filling is quite good (and generous on the beef) but this story here truly is familiar: the crust is absolutely insane. Chef Rucker has said before that she’ll keep doing these specials and collabs to draw people in, so it’s exciting to think about what she’ll cook up next. That said, this is one of–if not the–best they’ve done to date. I have no idea if it will be available next week, but if so do not miss it.
So down for the bo kho and that cranberry buttermilk is one of my favorites from her!
I ate a slice of the cranberry buttermilk like it was a slice of pizza. Highest recommendation.
Yeah, that Cranberry Buttermilk Chess Pie is certainly something. Got Chef Rucker to show me the whole pie (minus a slice lol)…
Alas, my heart still belongs to the Fat + Flour Curry Greens Potato hand pie. It is just as (if not more) flaky, savory, and luscious as any omnivore hand pie I’ve had.
nicole rucker x shawn pham bo kho pot pie
this was fantastic, the filling was a little heavy on the five-spice/cinnamon but was still solid. but my goodness, I agree with @rlw, the crust was incredible, soft and flaky at the same time and oh so buttery. she could fill these with durian and it would still be delicious.
jump on these if she makes more @attran99, @TheCookie, @foodshutterbug, @hppzz
Is she still doing Sweet Potato?
i don’t see it on the menu anymore
Darn it!
Honestly probably the best crust she’s had on any item. Especially with the salt on top

Delightful gastronomic torture porn for gluten intolerant folks who can’t even get to GCM during the pandemic.
However, there are several items I know I will enjoy eventually. Thanks for posting, everybody.
