Preeti Mistry Goes From Table to Farm

Coming from the restaurant industry in cities, what is farm to table? And somehow farm to table is always California cuisine, or it’s bland, or it’s, you know, Rene Redzepi smoking herring or something. It’s not Indian. It’s not Chinese. It’s not Mexican. It’s not Thai.

Bizarre thing for an SF Bay Area chef to say, given that we have all of those (or did, before the pandemic). Or for anyone to say about Redzepi, given his team’s project in Mexico.

Isn’t what Chef Pim doing farm to table thai?

Yes. And there are several Mexican places, including a couple competitively-priced burrito joints with their own farm, a few Indian, and at least one Chinese. Plus some other non-European cuisines.
